The Data Connections are global in a Qlik Sense Enterprise system, i.e. they are not tied to any specific app. Therefore if you query the system using e.g. Engine API "GetConnections", you will get a list of all the data connections available in the system.
Unfortunately there is not a dedicated API in Qlik Sense that gives you the association information between data connections and apps. However you can get that information in two stages.
First step, you can call GetScript() in Engine API to fetch the whole script. And parse it and search for 'LIB CONNECT' for each connection name in the script.
The second step, call GetConnections() in Engine API. Then search in the response with the connection names you have got from the first step, in order to get more detailed information such as the full connection string etc.
If you want to have more details from the data connections, you can switch the second step by calling QRS API 'qrs/dataconnection'.
